BEETROOT AND FETA CHEESE HUMMUS WITH ADAPTOGENS

  BEETROOT AND FETA CHEESE HUMMUS WITH ADAPTOGENS

Ingredients:

  • 250g cooked chickpeas
  • 1 cooked beetroot
  • Juice of ½ lemon
  • 100ml extra-virgin olive oil
  • 1 tbsp tahini
  • 1 tsp Cokare ENERGY elixir
  • 2 tbsp crumbled feta cheese
  • 1-2 tbsp chopped pistachios
  • 2 Naan bread or Pita bread
  • Chopped fresh cilantro, dill and mint leaves
  • Salt
  • Freshly ground black pepper

Preparation:

  1.  Process chickpeas with cubed beetroot, lemon juice, seasonings and olive oil.
  2.  Serve with crumbled feta cheese on top, chopped pistachios, cilantro, dill and mint leaves. Finish with a drizzle of extra-virgin olive oil.
  3.  Serve with toasted Naan or Pita bread.
