Shiitake Infusion

This Shiitake infusion has become our favourite warm up. Nothing like a bowl of this comfort food at supper.

INGREDIENTS

  • 1 Yellow Onion
  • 1 Garlic Clove
  • 1 Tablespoon of Olive Oil
  • A Handful of Shiitake Mushrooms
  • 1 tablespoon of Cokare's Focus Adaptogen Mushroom Elixir
  • 2 Cups of Vegetable Broth without added salt
  • 1 pinch of Miso

Let's prepare our soup base by adding mixing sautéing the diced onion and diced garlic with 1 teaspoon of olive oil.

Add the shiitake mushrooms and stir for a few minutes, add a pinch of salt and black pepper.

Pour in the vegetable broth and two cups of water.  Add Cokare's Focus Adaptogen Mushroom Elixir and simmer on a low heat with the lid on for 15 minutes.
