Process chickpeas with cubed beetroot, lemon juice, seasonings and olive oil.
Serve with crumbled feta cheese on top, chopped pistachios, cilantro, dill and mint leaves. Finish with a drizzle of extra-virgin olive oil.
Serve with toasted Naan or Pita bread.
